APPEARANCE
Deceptively light in colour.
NOSE
A spring back-yard flower garden surrounded by red currant hedges and wild strawberries.
PALATE
The palate is complex, delicate, perfumed and long, with intense flavours of cherries, pomegranate and black olives.
AGEING
The wine is settled and pumped into new four years old French oak barriques, where it matures for ten months. While in oak the wine goes through malolactic fermentation. It is then matured on lees until it is racked out of barrel and then given a gentle filtration on its way to bottle.
PAIRING
Dishes with a touch of spice, barbecues, seared salmon and tuna, but also dishes that include cherries or figs. Drink now to 2022.
