Following through from the nose, the palate is warmly generous and fleshy, with a smooth and elegant finish.
The malolactic fermentation takes place in concrete vats and precedes a maturation of 12 months in 100 year old oak vats.
Enjoy with a traditional hare civet, beef cheeks, braised lamb shoulder or simply a chocolate mousse with raspberry coulis.
